Yesterday, I made my mother's recipe for Zucchini Cake. I added a thin layer of cream cheese frosting. Enjoy!
Mama's Zucchini Cake
Preheat oven to 325-350 degree F.
Sift together:
3 cups flour
2 tsp baking powder
1 tsp baking soda
1/2 tsp salt
1 1/2 tsp cinnamon
In another bowl, beat together:
2 cups of granulated sugar
1 1/2 cups vegetable oil
4 eggs
1 tsp vanilla
Gradually add flour mixture into sugar mixture. Gently stir until well combined.
Fold in 3 cups of shredded zucchini. (I used a food processor to shred this. You could also grate the zucchini.)
Grease a 9" x 13" baking pan.
Bake at 325-350 degree F oven for 45 min - 1 hour until done. Cool.
Cream Cheese Frosting
Beat together until smooth:
3 oz cream cheese, softened
1/4 cup butter, softened
2 cups confectioners sugar
1 tsp vanilla
Spread on cooled cake.
*I like to refrigerate this cake but you don't need to.
