Mama's Zucchini Cake

Yesterday, I made my mother's recipe for Zucchini Cake.  I added a thin layer of cream cheese frosting.  Enjoy!

Mama's Zucchini Cake

Preheat oven to 325-350 degree F.

Sift together:
3 cups flour
2 tsp baking powder
1 tsp baking soda
1/2 tsp salt
1 1/2 tsp cinnamon

In another bowl, beat together:
2 cups of granulated sugar
1 1/2 cups vegetable oil
4 eggs
1 tsp vanilla

Gradually add flour mixture into sugar mixture. Gently stir until well combined.

Fold in 3 cups of shredded zucchini.  (I used a food processor to shred this.  You could also grate the zucchini.)

Grease a 9" x 13" baking pan.

Bake at 325-350 degree F oven for 45 min - 1 hour until done. Cool.

Cream Cheese Frosting

Beat together until smooth:

3 oz cream cheese, softened
1/4 cup butter, softened
2 cups confectioners sugar
1 tsp vanilla

Spread on cooled cake.

*I like to refrigerate this cake but you don't need to.

  1. Thank you for the recipe! I'll let you know if I try to make it. You'll have to come over and approve it 😉

  2. Your mama’s cake sounds heavenly, Gina, especially with a cream cheese frosting!

  3. Hi Gina, I have been taking an unofficial blog break, but I am back and glad to see you are sharing your wonderful recipe. My daughter grew a bumper crop this year and has a freezer full of grated zucchini. She will love this recipe and hopefully she'll save me a piece! xx K

But oh! the blessing it is to have a friend to whom one can speak fearlessly on any subject; with whom one's deepest as well as one's most foolish thoughts come out simply and safely. Oh, the comfort — the inexpressible comfort of feeling safe with a person — having neither to weigh thoughts nor measure words, but pouring them all right out, just as they are, chaff and grain together; certain that a faithful hand will take and sift them, keep what is worth keeping, and then with the breath of kindness blow the rest away. ~Dinah Maria Craik, A Life for a Life, "Chapter XVI: Her Story," 1859
